Castellano

Queso Castellano is made from 100% sheep's milk in Castilla y Leon, Spain's largest flatland. This region, known for its rich history of Kings, Knights, and castles, has a centuries-old tradition of cheese-making. The extreme climate shapes the character of its people and this unique PGI cheese, named after the land and its native language, "Castellano." Crafted using traditional methods similar to Manchego and other hard Spanish cheeses, the process has remained unchanged for centuries.
